Wine Clubs Done Right

It all started with a tweet.

Terret noir!?!

I was only familiar with this grape as one of the obscure little brother varieties in Châteauneuf-du-Pape. For some added geekiness, courtesy of Jancis Robinson’s Wine Grapes, the noir is a color mutation of the Terret grape with blanc and gris versions as well. Apparently, in the 1950s, Terret gris was the most widely planted grape variety in the Languedoc with over 20,000 acres!

Who knew? But now there are only around 257 acres of Terret gris left with approximately 3500 and 460 acres of Terret blanc and noir respectively.  I was excited to read about Tablas Creek’s version of this obscure grape. I visited Tablas Creek several years ago where I geeked out over their nursery of Rhone varieties, taking many leaf and vine pictures that I uploaded to Wikipedia (as Agne27). I’ve always been impressed with Tablas Creek’s effort to introduced new varieties to the American consumer.

So I tweeted my enthusiasm and went to Tablas Creek’s website to see what they had available.

Petit Manseng! Clairette blanche! Picardan! and, of course, Terret noir. But there was a catch—beyond many of them being sold out. Most of these uber geeky bottlings were limited to members of Tablas Creek’s wine clubs.

Instead of being bummed, my reaction was to appreciate the brilliance and good business sense. My biggest gripes about wine clubs, and why I join very few of them, is that they rarely offer compelling value.

What makes a wine club appealing to join?

Wine industry folks talk ad infinitum about how to improve wine clubs to encourage more sign-ups. It is no secret that the financial stability of consistent wine club sales is essential to many small wineries’ bottom line. With so many things competing for a consumer’s wallet, how does a winery entice folks to join?

Well for me, my decision to ultimately sign up for the Tablas Creek wine club was driven by three factors.

1.) How easy can I get your wines at home?

I live a little closer to Beaucastel in Seattle at around 8600km than Tablas Creek is to their partner estate. But I have no problem finding bottles of Ch. Beaucastel.

This is a big reason why I don’t join the wine clubs of many Washington (especially those in Woodinville) and Oregon wineries. Living in Seattle with an abundance of wine shops and tasting rooms close by, I can get most any wine I want from these local wineries. Yes, getting a 10-25% discount and invitation to “members only” events is nice but what is more appealing is access and exclusivity. This is where I tip my hat to Tablas Creek for their impressive selection of “Members Only” wines.

This created value in my mind because I wanted access to these wines. I want to try a Terret noir. I want a varietal Picardin. Even if I lived right next store to Tablas Creek, I still couldn’t get these wines easily if I wasn’t a member. That’s a strong incentive for a wine consumer like me.

Yes, I know plenty of my local Washington and Oregon wineries have “Members Only” bottlings, but very, very few of those wineries put them front and center on their wine shop page or highlight them as much as they should. And, truthfully, many of these “Members Only” bottlings are not that exciting compared to what the winery is already producing.

More than “Members Only”

A special one barrel “Members Only” blend? Um, okay that could be great but your regular red blend that I can buy is pretty darn good so why should I buy the whole cow and join your club when I’m already happy with the chocolate milk?

Now a three bottle “Members Only” set of the same grape variety but from 3 different clones, three different vineyards or 3 different kinds of oak barrels–THAT’S intriguing. That is not something I can regularly get from yours or any other winery. That’s something with compelling value and exclusivity.

In the case of Tablas Creek, I would have to do a fair amount of hunting on WineSearcher.com to find a bottle of Terret noir. While I can get their Esprit de Tablas and Patelin de Tablas blends at local wine shops, with these obscure varietal bottlings their wine club provides a chance to get something above and beyond their typical retail offering.

That’s intriguing. That’s worth buying the cow.

2.) How many bottles am I committing myself to?

But to be honest, I don’t really want a whole damn cow.

Frankly, I’m a bit of a slutty boozer that likes to play the field with many different types of wines and alcoholic beverages. Just peruse the archives of this “wine blog,” and you will see. For every couple of wine-related posts I do, I’m just as likely to post about a whiskey like the Edradour 10 year or a beer like the Bourbon County series from Goose Island.

I want to commit, but I’m truly only faithful to my wife.

That is why flexibility with wine clubs is so vital. Here, again, I’ll tip my hat to Tablas Creek for offering options of 6, 12 and 24 bottle commitments. Each tier has its ancillary perks, letting consumers pick just how much cow they want to bring home. Starting with a six-bottle a year commitment is not going to tie down my wine racks.

But I decided to go with the 12 bottle VINsider tier because A.) I saw 12 bottles on their shop page alone that I want to drink and B.) It seemed like having “Shipment wines specially selected by our winemakers” increased my odds of getting the geeky bottles I want.

3.) How likely is the style of wine going to change?

Though I do wonder what happened to this potted Grenache blanc vine. Is it still chilling outside the tasting room? Or did it grow up to be a big boy vine in the vineyard?


In our tumultuous era of mergers and winery acquisitions by big mega-corps, there is always a chance that your favorite winery is going to sell out. That potentially could mean a new style of wine driven more by focus groups rather than a focus on terroir. While I know that doesn’t matter to everyone, it matters to me and how I spend my money. Sometimes it is not even an acquisition that changes a style but rather a winemaker moving on with the new winemaker doing things just a little bit too different for your taste.

As a newbie wine lover, I learned this lesson the hard way when I first moved to Washington State in 2004. I fell in love with the wines of David Lake at Columbia Winery and joined their club. Failing health caused Lake to retire in 2006 with him passing away in 2009. Of course, you can’t blame the winery or David for that but the style of the new winemaker, Kerry Norton, just wasn’t to my taste. It took a year’s worth of unexciting wine club shipments for us to finally realize that the style had changed and wasn’t coming back, leading us to quit the club. This was before Gallo later bought Columbia and took it even further away from David Lake’s style.

Change happens. I get it. But if I’m going to invest in a wine club, I want to wager on one that I’m confident that I’ll be liking their wines for a while.

Looking at Tablas Creek’s website, I got a lot of comfort seeing the continuity of their leadership, viticulture and winemaking team. Many of the same people that were making those delicious wines I tried on my visit in 2012 are still there six years later.

That makes Tablas Creek feel like a solid bet of being a winery that I’m going to enjoy being part of their wine club.

Are Americans Ditching Beer?

The Spirits Business is blaring the headline that “US alcohol consumption declines for second year”.

Yikes!

Well not so much. Digging a little deeper beyond the headline, The Spirit Business notes that the IWSR report attributes the 0.2% drop in alcohol consumption to a 0.5% decline in beer sales which represents 79% of the alcohol market in the US.

If you look at wine and spirits, we’re actually seeing positive growth of 1.3% and 2.3% respectively.

Phew!

Or is it?

There is clearly something going on with the decline of beer consumption with the mega-Goliaths of the industry like Constellation Brands and AB InBev struggling. Though while people may not be drinking as much Corona and Bud Light, the craft beer market is still seeing steady growth. Likewise, the cider industry has also been seeing positive numbers.

Could it be that more Americans are following the adage of “drink less, but better”?

Perhaps.

Why drink Corona when you could have some fantastic ciders from Elemental Cider in Woodinville, WA?


Instead of the light lagers of macrobrews, it seems that Americans drinkers are moving towards IPAs and seasonal beers that often have higher alcohol %. These tend not be brews that you can guzzle down a six-pack or do keg stand with. Indeed, part of the appeal of craft beers is that you can sit down and actually geek out over them, taking time to savor the experience.

And, of course, we know how Millennials are all about those experiences.

Plus with the growth in hard alcohol and cocktails, it is very likely that rather than ditching alcohol, Americans are simply trying to get more out of their drinking than just getting their buzz on.

I would say to my friends in the beverage industry not to fret about the headlines touting a decline in consumption. Americans are drinking plenty.

Drynuary be damned.

Snooty or Flute-y?

Don’t you know that all the cool kids are ditching flutes in favor of regular wine glasses? As Margareth Henriquez, president of Champagne Krug, describes it, drinking your bubbly from flutes is like going to a concert with ear plugs and should only be used for “…bad Champagne, sorbet or gazpacho.”

Oh my!

A few folks had some dissenting opinions on this anti-flute craze, most notably Jameson Fink of Wine Enthusiast who wrote an impassioned defense of the unfashionable flute, bringing some scientific expertise for back-up.

It’s a good defense. The most persuasive argument comes from David Gire, assistant professor at the University of Washington’s psychology department. Gire notes how important visionary aesthetics are to our enjoyment. He also describes how these aesthetics can psychologically impact our perception of flavor.

As Fink points out, even the most ardent anti-flutists can’t discount the visual appeal that flutes have with their cascading beads of bubbles.

Now for me, I take a pragmatic approach. I’ll drink my bubbles from a variety of vessels and see what I like. So far, my runaway favorite has been the Luigi Bormioli Wine Styles Pink Wine Glass. You can see it in use for many of my sparkling wine reviews such as for the Paringa Sparkling Shiraz and Deligeroy Cremant de Loire.

I’ll also use a traditional flute as I did in my reviews of the Levert Freres Cremant de Bourgogne, Heidsieck Monopole Blue Top and Segura Viudas Cava. And I will do like the cool kids sometimes in using a regular ole wine glass such as with the De Venoge Princes Blanc de Noirs.

The Bormioli pink wine glass has become my go-to because it combines the best of both worlds. I get a wider opening that allows the aromatics to come out, but it is sufficiently narrow to showcase the bubbles.

You can see the difference in bubbles between the three types of glasses – the Bormioli pink wine glass, a flute and a regular wine glass.

For the most part, I agree with Fink that the visual spectacle of the bubbles is key to enjoyment.

There are advocates in the wine industry (such as Robert Walters in his book Bursting Bubbles) that argue that focusing on the “bubbles” in Champagne takes away from appreciation and evaluation of it as a “real wine.” In their opinion, a great Champagne is one that you could completely degas and it would stand on its own. The trend away from flutes (so they say) helps highlight the “realness” of great Champagne.

There may be truth to that but, dammit, I like my bubbles!

However, I can’t wholly join Fink on the dark side of Flute Apologetics. In my own anecdotal experience, I don’t get as much life and depth from my bubbles when I’m nosing them through the narrow opening of a flute.

In fact, a friend of mine of who read my lackluster reviews for the 2004 and 2006 vintages of Dom Perignon at Daniel’s Champagne Gala, urged me to try them again in a regular wine glass because, in his view, the “yeasty depth of Dom never shows well in a flute.” He probably has a point.

So I like my compromise Bormioli glasses but I’ll certainly keep on experimenting.

My Beer of the Year


There is still 28 days left but I’m going to be hard-pressed to find a beer more utterly scrumptious than the 2017 edition of the Firestone Walker Anniversary Ale. With all apologies to the Samuel Adams Utopias, which I’ll continue to enjoy well into the next year, this beer hits it out of the park and is actually something that I would call beer.

First some geekery.

The Anniversary Ale is a limited release done each year by Firestone Walker that blends together several of their vintage barrel-aged brews into a unique expression. I couldn’t find the exact amount of cases produced but the 2009 edition had around 1000 cases and the 2016 edition was around 3500 cases. However, all those previous editions were bottled in 22 oz bomber size bottles with the 2017 edition following the pattern of the other 2017 vintage-series releases and now being packaged in smaller 12 oz bottles.

Being located in Paso Robles, a well known wine-making region, the brewmasters at Firestone Walker invite local winemakers to help participate in the blending process. The 2017 blending committee featured an impressive cadre of winemaking talent including Justin Smith of Saxum Vineyards, Neil Collins & Chelsea Franchi of Tablas Creek Vineyards, Fintan Du Fresne & Mike Callahan of Chamisal Vineyards and Kevin Sass & Molly Lonborg of Halter Ranch.

The blending was done as a competition with the winemakers and brewers split up into teams with the winning blend for the 21st Anniversary Ale being crafted by Anthony Yount of Denner Vineyards and Jordan Fiorentini & Kyle Gingras of Epoch Estate Wines.

The final blend for the Anniversary Ale XXI included:

42% of the Velvet Merkin, an Oatmeal Stout aged in bourbon barrels with 8.5% ABV and 32.5 IBUs.
18% of the Parabola, a Russian Imperial Stout aged in bourbon barrels with 13.1% ABV and 80 IBUs.
17% of the Stickee Monkee, a Central Coast Quad aged in bourbon barrels with 12.5% ABV and 45 IBUs.
14% of the Bravo, an Imperial Brown Ale aged in bourbon barrels with 13.5% ABV and 35 IBUs.
9% of the Helldorado, a Blonde Barley Wine aged in rum barrels with 13.5% ABV and 32.5 IBUs.

The Beer

Now I must confess that I am not a big stout fan. I love malty Belgians, dopplebocks, scotch ales and barley wines but many stouts I encounter often have too much bitter roasted coffee or burnt chocolate notes on the nose that turn me off. Often when I smell a stout, I feel like I’m trapped inside a burning Starbucks.

Looking at this blend with with the Velvet Merkin and Parabola being the majority components, I wasn’t optimistic about this beer being my style. But pouring the beer into the glass, I was entranced by the smell of fresh Mexican chocolate with its subtle smokiness and cinnamon and nutmeg spices. From the bourbon barrel components, I could also get noticeable vanilla but it wasn’t a syrupy sweet vanilla like you get with Bulleit bourbon but more of a robust spicy vanilla like with a Basil Hayden bourbon. Around the edges there was the slightest twinge of coffee but it plays a very minor role. What I loved about the nose is that the savory components of spice and chocolate were at the forefront with the sweeter elements wrapped underneath as a cushion instead of blanketing it.

This ain’t your momma’s Hershey chocolate.

On the palate, the intermingling of savory and sweet continued. The beer is downright mouthwatering!

The vanilla morphs a little more into caramel in the mouth but unlike with the Utopias, there is not really a salted element, but rather its the spiced Mexican chocolate flavors that compliment it.

The flavors from the rum barrel of the Helldorado make an appearance with a dried citrus fruitiness and more exotic spices that really persist throughout the finish. Relatively low in hops, there is just enough there to add a balance of freshness and structure.

But the star of the beer is truly the mouthfeel. Silky, creamy and very sexy, this beer rolls around your tongue and continues to tease you all along the way. It begs you to immediately want to take another sip even though you want to wait to savor the long, lingering flavors on the finish. It becomes a bit of an internal battle between wanting to intellectually enjoy and unwrap all the flavors the beer can provide (especially as it warms up) and it being so irresistibly delicious that you just want to indulge your inner hedonist and chug. Despite being a hefty 11.8% ABV, the beer is inimitably session-able.

Verdict

Delicious. Scrumptious. Mouthwatering. Smooth. Complex. This beer delivers in spades and is bloody fantastic. Yeah, it is a bit pricey at around $13 for a 12 oz bottle (though that is a fraction of the price of the Utopias) but it is a treat and would make a great stocking stuffer for a beer lover.

In Defense of Evil Empires


Recently Esther Mobley of The San Francisco Chronicle wrote of the blockbuster Pinot noir producer Kosta Browne’s new direction away from their super-lush and highly extracted style to something less “over-the-top, opulent, blow-your-lid-off wines.” The catalyst for this change, according to Kosta Browne’s president Scott Becker, is changing consumer demand, particularly among Millennials.

A sharp motivation also seems to be a bit of ego bruising that Kosta Browne has taken over the years for being a poster child of the high alcohol, super-ripe and hedonistic wines that flooded the market in the last few decades. Mobley quotes founder Dan Kosta concerns over his namesake winery being used by winemakers in Oregon and by organizations like In Pursuit of Balance as an example of what not to do with Pinot noir. The Chronicle article also includes an amusing anecdote about a sommelier at the NYC restaurant Breslin being ignorant that a winery named Kosta Browne even exist.

I find your lack of faith disturbing.

Quick look–is this Pinot noir or Syrah? Sometimes it’s hard to tell with wines as well.

Let’s set aside how poorly that story reflects on the quality of the wine knowledge for a restaurant’s program. As an owner/wine director, I would expect my sommeliers not to be ignorant of a winery that has won Wine Spectator’s Wine of the Year (and been featured in their Top 100 list numerous times) and is regularly in the top half of most collectible wines from California according to Vinfolio’s Collectibility Index. Love them or hate them, Kosta Browne is, for all practical purposes, part of the pantheon of “cult producers” of Pinot noir in California with a 2 to 5-year long waiting list.

Even if you don’t like Kosta Browne and don’t feature them on your wine list, it’s beyond pale to shrug your shoulders at the name as if you’ve never heard of them.

I say that as someone who really doesn’t like Kosta Browne’s wines. Like many somms, I roll my eyes at seeing them on restaurant wine lists with their exorbitantly marked up prices just waiting for an expense account ego to order them.

Even if Kosta Browne is not my style, I’m a bit saddened to read about this “change in direction.”  It’s not that I don’t think pursuing more balanced wines isn’t a worthwhile goal. But seeing Kosta Browne trying to become “more restrained” in style is a bit like following the Hot Stove League in Baseball in the post-Steinbrenner years as the New York Yankees aim to be more “fiscally restrained.” Yeah, you’ve got the LA Dodgers and Boston Red Sox’s trying to fill in the gap with their best Belle Glos and Sea Smoke like efforts. But as a fan of an old school small market Joseph Swan-like team (the St. Louis Cardinals), the excitement of potentially landing a big fish is not quite a thrilling when one of the Goliaths of the game are sitting on the sideline. David isn’t David if the slingshot is never used.

Likewise, how exciting would the Star Wars movies be if the Galactic Empire changed philosophies all of a sudden and started espousing Kofi Annan style diplomacy?

There’s always a bigger fish.

The world needs Evil Empires like the New York Yankees and Kosta Browne. Because the little guys, the outsiders, the rebels, the hipster snobs need something to target. The world needs a balance between good and evil and you can’t have one without the other. So why should we root for Kosta Browne to shed its evil ways and try to become something….else? Do we think that people will suddenly stop wanting to drink lush, full-bodied and highly extracted Pinot noirs? Of course not! Just like matter can be neither created nor destroyed, so too, is evil and the taste for residual sugar in wines is constant.

And as we’ve seen from history, when a vacuum of evil is created, there can be consequences when a new force tries steps in.

You can argue that a lot of the world’s recent problems can be traced to the Chicago Cubs winning the 2016 World Series by trying to out-Yankee the Yankees.

If I could photoshop him twerking on the Camaro, I would.

They went from being the lovable, lowkey Eraths of the Pinot noir world to the big budget and crass-commercialized Meiomi. They changed their style, trying to become the “New Evil Empire” and it messed up the cosmic order. Now we have women twerking on top of cars, folks dropping turkeys from planes and idiots launching home-made rockets trying to prove the world is flat. Yes, the world is out of whack. I place the blame squarely on Ben Zobrist.

You can’t stop the change, any more than you can stop the suns from setting.

Sure, big over-the-top wines can be tedious and lack “character”. Likewise, big, cash-rich organizations that can buy or trade for any stud player can be infuriating and soulless. But doesn’t having Evil Empires exist make it more satisfying when you find a gem? A wine that tells a story to your palate. Or when your plucky rag-tag team of no-names finally scale the summit?

Sure, we want to root for the underdogs. But we also need those Big Dogs to be still casting their long shadow of evil like the Death Star. The world works better this way. It has balance even if that balance is dripping with sugar, extract and alcohol.

There is a place in the world for the Kosta Browne Yankees just like there is a place for my Joseph Swan Cardinals, the Merry Edwards Twins, the Beaux Freres Giants, the Argyle Mariners and the Williams Selyem Braves.

There is even a place, begrudgingly, for the Meiomi Cubs. Well, once they’ve been dethroned and relegated to the bottom of the shelf.

Gin Scratch Fever


In Edmonds, Washington by the waterfront is a must visit site for any gin lover– Scratch Distillery.

Founded by self-described “gin-nerds”, the story of Scratch is intimately tied with the motto of Kim and Bryan Karrick–Gin Equals Love. It was their shared love of gin and quest for the perfect martinis and gin & tonics, that led them to start their distillery in 2013. After years of attending classes, internships and reading nearly every book on gin they could get their hands on, they officially opened the distillery on July 10, 2015.

I got a chance to learn more about their story and making gin during one of their Giniology sessions hosted at the distillery. This was truly a one of a kind experience that immerses you into the world of gin production, getting up close and personal with the history of the spirit, its classic cocktails and the endless potential of the many different botanicals that are used it craft it.

The Giniolgy starts with a pre-class Gimlet cocktail made by their staff mixiolgist using Scratch’s Martini-style gin. As you get settled in, Bryan Karrick explains how the Gimlet is a surprisingly simple cocktail made in 5-1-1 ratio of gin, lime juice and simple syrup that hides really well how strong and potent it is.

And he was quite right! Beautifully aromatic with the citrus notes of the lime playing off the spice of their Martini-style gin, and silky smooth to boot. I can easily envision this being a cocktail that someone would get seconds and even thirds of before realizing how much booze is in there.

The class then spends about 30 minutes going into the history of Gin, tracing the early origins of distilling, the development of the alembic still and the creation of medicinal tinctures to the birth of the malty Dutch jenever. The modern concept of gin really takes off in the 18th century in Great Britain which introduced to the world the slightly sweet Old Tom gin , the gun-powder ready Navy Strength, the historic Plymouth and, finally, the London Dry styles of gin that we see in marketplace today.

The class also touched a bit on the cultural role of gin and how it evolved from a public scourge during the “Gin Craze” of the 18th century to the choice tipple of naval officers before becoming the benchmark of white-collar sophistication in the mid 20th century with the “Three Martini Lunch”.

I came into the class with some familiarity about gin after reading Lesley Jacobs Solmonson’s Gin: A Global History and Dave Broom’s Gin Manual but I was impressed with Bryan Karrick’s concise but very detail-oriented intro into the world of gin. You can see the passion and “gin-nerdiness” at work and its hard not to be infected with his enthusiasm for the spirit and the role it has played in history. However, where the class leaped beyond the pages of any gin book is when Kim took over and brought the class into the distillery.

At its core distilling is very simple. You start out making essentially beer and then move it to a still where heat vaporizes the alcohols that are then captured and condensed backed into a liquid form. But being simple is the recipe for making Everclear. The art and craftsmanship in distilling comes in all the tiny decisions and the watchful eyes that follow the process from start to finish.


The most fascinating part of the entire Giniology session is watching Kim talk through each of these tiny decisions from creating the wash to moving it to the pot still for the first distillation and then the careful temperature control and sleepless nights monitoring as the distillate works it way through the multiple plates of the column still. Since different alcohols vaporize at different temperatures and you only really want the “heart” of the distillate, monitoring this process and making the decision of when to make the cut is one of the distiller’s most important tasks.

Just visible between the column stills in the picture above, the magic happens with the introduction of a gin (or botanical) basket. Here the Karrick’s commitment to doing everything “from scratch” with organic, non-GMO and locally sourced botanicals is put into practice to craft a high-quality product that is light years beyond the mass-market gin brands.


I really can not give justice to the wealth of information and eye-opening experience you get walking through the process of gin production with Kim and Bryan. Over the course of the 40 minute tour of their little one-room distillery, you are certain to leave with a deep-seated appreciation for the craftsmanship as well as the hours of time and sweat that goes into making something that a lot of people just think of as tipple for their gin and tonics.

And speaking of G & T’s, after the distillery tour, you are greeted with one made with Scratch’s Gin & Tonic style gin as you hunker down to indulge in your inner mad scientist. Here the Giniology class goes from strength to strength as Kim and Bryan walk you through how to come up with your own personal gin–starting with first really getting to know the ingredients.

Have you ever rolled juniper berries and coriander seeds between your finger tips? Ever smelled orris root on its own? Seen angelica root up close and personal? Played around with hop flowers? Have you ever even heard of galangal root?

Even if you could answer “Yes” to all those questions, I would still wager that you’d get a sense of childlike wonderment as the dozen or so jars of botanicals are passed around and you get a chance to fully engage your senses with each. I found myself thinking back to early herbalists across ancient cultures who would look at each and every one of these herbs, seeds, flowers and roots with an inquisitive mindset of what kind of healing or intoxicating properties each had.


After getting familiar with the botanicals themselves, you move on to smelling and tasting them in isolation. Using neutral potato spirit, Scratch isolated 30 different botanicals that are commonly used in gin to give folks a chance to experience what each individual component can bring to a recipe. It can be a bit overwhelming for the senses which is a testament to the discipline required by master distillers like Kim Karrick to sit down and really study each of these botanicals as they craft their proprietary recipes. Like a chef combining food flavors and textures, you see the art in the distiller’s blending of different flavors and sensations with the intermingling of citrus, floral, spice and heat.


While the possibilities are endless, going through the exercise you start to see some patterns in the process beginning with why the core four ingredients of juniper, coriander, orris and angelica root form the bedrock of nearly every gin recipe. With Kim and Bryan’s guidance, you also learn about some of the “house styles” of popular gin brands which is very valuable in crafting your own blend.

Do you enjoy Hendricks? Well that is a floral-focused blend with caraway, cubeb berries, cucumber, lemon, meadowsweet, orange and rose. Is Bombay Sapphire your go-to? That’s a citrus-driven blend with lemon, grains of paradise, cubeb berries, cassia bark, almonds and licorice.


Though more important than knowing your favorite brand is knowing what you want to do with gin. Gin’s versatility in cocktails is legendary but the perfect gin for a Negroni may not be the perfect gin for an Aviation. In crafting my recipe, I told Kim how I liked more citrus oriented Gimlets and Martinis (and that I absolutely adored Scratch’s Martini-style gin), so she steered me towards a relatively soft blend that was high on the citrus aromatics but with enough spice to balance.


If you are intimidated by the math and ml conversions–especially after enjoying two cocktails–don’t be. Thankfully, there are professionals there to do the blending for you. While the staff at Scratch are making your blend, you get an opportunity to try many of Scratch’s other offerings like their vodkas, “bier schnapps” and barrel-aged gins.


And then finally, after probably the most fun 3 hours of “work” you’ll ever have, you leave the Giniology class with your own custom bottle of gin and a recipe that is kept on file at the distillery and can be replicated whenever you like. If you’re like me, you’ll probably also leave with a few extra bottles of Scratch’s products like their crazy smooth organic wheat vodka that makes Grey Goose seem like a bottom-shelf pour and a pepper infused vodka (made from a blend of Jalapeno, Serrano, pink and black peppercorns) that is just begging to be used in a Bloody Mary.

Overall, this is truly an experience that is well worth the time and cost to attend. If you are already an avowed “gin-nerd”, you will revel in the geekery of playing with the botanicals and crafting your own personal expression of your favorite spirit. But even if your only experience with gin has been the occasional martini or G&T made with the handful of mass-market brands, its still worth checking out this small, family-owned distillery.

I guarantee that not only will you end up having a lot of fun but you’ll also just might find yourself Scratched with a case of Gin Fever.

Running Out of Stones (and Glaciers) in the Age of Climate Change

By the year 2100, some of the most exciting wines being made could be Scottish Pinot grigio and Suffolk Syrah. Such is the (potential) reality of climate change predicted by professors from the University College of London in a study commissioned by wine merchant Laithwaite’s. While the English sparkling wine industry has already seen some benefits from changing climates, an expected increase in global temperatures of 2° Celsius (3.6° F) and more rain could mean a dramatically new landscape for both wine lovers and producers.

But at a cost.

For every climate change “winner”, there are also losers as traditional and well established wine regions have to grapple not only with changing vintage patterns but also the changing dynamics of consumer tastes and fashion. It’s no secret that consumers’ tastes have been trending towards riper, more fruit-forward wines that are either sweeter in sugar or “bolder” in flavor and alcohol for some time now.

While there are still fans of lower alcohol, less fruit-driven wines, it’s hard for those kind of wine drinkers to not feel like their taste and preferences are being relegated to the Stone Age of the wine industry. As we start seeing strings of highly acclaimed “blockbuster vintages” being bolstered by warmer climates, it may be more than just the wine map that has to change in this new age of wine drinking.

In Germany, producers are enjoying a “boon” of riper vintages. But they are finding themselves in the unique position of being a country known for bracingly acidic and vibrant Rieslings, needing to now acidify their wines. A recent Wines and Vines article on the 62nd German Winegrowers Congress in Stuttgart, included comments from the keynote address of Dr. Monika Christmann of Geisenheim University .

Dr. Christmann noted that producers are finding themselves at a crossroads. On one hand, they can let the impact of climate change steer the style of wines in their region towards a different direction.  Or they can adapt new methods afforded by modern technology to help maintain the “traditional styles”. But that comes with the trade off of potentially using very non-traditional means like reverse osmosis, crossflow filtration and additives.

While the issue of climate change and the trend towards fruit-forward, high alcohol wines certainly vexes the hoi polloi of wine writers and “taste makers”, you can complete that trifecta of ire with the battle of modern winemaking that embraces the use of technology versus natural wine which eschews it use.

Moving On or Moving Away?

Does the thought of German winemakers needing to add acid to their Rieslings horrify you? Then you may have some sympathies with natural wine enthusiasts. They would argue that if you have to “manipulate” your German Riesling to taste like what a German Riesling is expected to taste like, is it still really a German Riesling?

But are “natural” German Rieslings that are indistinguishable from tropical, lush, high alcohol New World Viogniers any better? This is something that winemakers will need to ponder.  One lesson worth listening to is this quote from Dr. Christmann.

“The Stone Age did not end because there were no stones left,” she said, but because early humans moved on when they discovered how to work with a better technology: metal.

We may not run out of stones in the world of wine. However, an unquestionable consequence of climate change is that something is going to get left behind. Eventually the industry and consumers will need to adapt to the changing reality of the world around us. We may have to give up “tradition” and expectations of what certain wines from certain regions should taste like.  And we may have to open our minds to the possibility of new styles and new fashions.

In the long run, we may gain new knowledge and introduction to fantastic terroirs.  We may also see the birth of new classics. However, this could come at the cost of mourning the loss of old favorites and classics. There will be conflict and there will be battles over the soul of wine. There will be change and there will be costs that the wine industry will have to bear.

But in the bigger picture, beyond the scope of wine, will be the tremendous costs that the whole of humanity will bear. As we ponder the changing wine map, we also shouldn’t forget that the world is losing things like glaciers at a frightening clip. Reading the warning of scientists about climate change and watching brilliant, but sobering, documentaries like Chasing Ice is enough to drive anyone to drink.

Though maybe we could pass on the Scottish Pinot grigio.

The Magic Beans of Wine

Sometimes it is a journey to find a good bottle of wine

One of my favorite links that I check almost daily is the news article aggregate of Wine Business Monthly. It’s a nice one page purview of what’s going on in the wine world. On one visit to the site, my eyes fell upon the click-bait title 10 Words To Look Out For On Affordable Wine Bottles. I clicked on the article and clicked and clicked and clicked some more (The Drink Business loves the slideshow format) and now my head hurts.

To save you the clicking, here are the 10 magical words (or, more accurately, phrases) that Business Insider and Jörn Kleinhans, owner of the The Sommelier Company, promises are virtually silver bullets that will help you bag high quality wine at affordable prices.

1.) ‘Classico’ on a Chianti
2.) ‘Riserva’ on Italian wines like Barolo or Chianti
3.) ‘Gran Reserva’ on a Rioja
4.) ‘Old Vine’ on a Spanish Grenache or California Zinfandel
5.) ‘Cru Bourgeois’ on a Bordeaux
6.) ‘Meritage’ on a California Cabernet Sauvignon
7.) ‘Trocken’ on a Riesling
8.) ‘Premier Cru’ on Burgundy
9.) ‘Cru’ on a Beaujolais
10.) ‘Grand Vin’ on a Bordeaux (Bordeaux Geeks who really want a belly laugh should just jump to this slide right now)

The issue is not that these are “silly words” or that there is not any benefit in learning what certain key phrases mean on wine labels. Quite the opposite. These are actually extremely helpful words and phrases that would be in Chapter One of any wine book titled How to Know Just Enough to Be Dangerous. However, it is beyond ludicrous to present these words as the secret code crackers that help you “navigate your way to an exceptional bottle of wine.”

I understand how alluring the thought is of magical words that only the wily and the wise know which, when whispered to you, opens up the gate to all the gems hidden in plain sight on wine shelves and wine lists. But there are no “magical words” in the world of wine and peddling a list like this as click bait to readers is like selling magic beans to Jack.

“Well, Jack, and where are you off to?” said the man.

“I’m going to market to sell our cow there.”

“Oh, you look the proper sort of chap to sell cows,” said the man. “I wonder if you know how many beans make five.”

“Two in each hand and one in your mouth,” says Jack, as sharp as a needle.

“Right you are,” says the man, “and here they are, the very beans themselves,” he went on, pulling out of his pocket a number of strange-looking beans. “As you are so sharp,” says he, “I don’t mind doing a swap with you — your cow for these beans.”

“Go along,” says Jack. “Wouldn’t you like it?”

“Ah! You don’t know what these beans are,” said the man. “If you plant them overnight, by morning they grow right up to the sky.”

“Really?” said Jack. “You don’t say so.”

“Yes, that is so. And if it doesn’t turn out to be true you can have your cow back.”

Now those who remember their childhood tales will know that those beans were, indeed, magical and the old man wasn’t necessarily lying. Planting the beans did produce a stalk that grew straight up to the sky. He just forgot to tell Jack about a few giant details that ended up causing, you could say, a few problems for the lad.

The same is true with this list. Jörn Kleinhans, the wine expert behind the list, isn’t necessarily lying in that knowing these phrases will be helpful in selecting good bottles of wine but he’s overselling it in his simplicity (i.e. “Wine that is only labeled Chianti is usually not very good. If you see ‘Chianti Classico,’ that is always a good wine.”) and leaving out some giant details that could end up leading you to A LOT of not-so-enjoyable bottles of wine.

Moral of the Story (TL;DR version)
Don’t be fooled by the promise and simplicity of magic beans. There’s ALWAYS more to the story. If you’re happy with that, you can stop reading now and start surfing Netflix for Jim Henson’s adaptation of Jack and the Beanstalk: The Real Story. But if you want to plant these magic beans, we can take a deeper look at this list and mine out the key details that will give you a better chance of finding the right wine for you the next time you’re at a wine shop or looking at a restaurant’s wine list.

1.)‘Classico’ on a Chianti
The assumption: “Wine that is only labeled Chianti is usually not very good. If you see ‘Chianti Classico,’ that is always a good wine.”

Some of these may be good, some not so good but they are all from the same Chianti Classico region.


Err….no: Chianti Classico is just a region like Napa Valley. Just as there are “good” Napa Valley wines, there are also “bad” Napa Valley wines. The same is true with Chianti Classico. Looking for a region alone on the label is never a winning strategy. Now, yes, there are some slightly more restrictive laws regarding yields, aging and blending (such as the fact that white wine grapes are no longer permitted in Chianti Classico). And, yes, you can make a fair argument that the terroir of the “Classico” zone of Chianti is better than the larger Chianti area–just like you could make a fair argument that the terroir of the Rutherford AVA is better than the larger Napa Valley AVA.

BUT… good producers make good wines in a variety of terroirs and many of those more restrictive laws of Chianti Classico, such as lower yields and not using white grapes in the blend, are followed by quality minded producers in the greater Chianti area anyways. In fact, from many producers you’ll see offerings of both a Chianti and a Chianti Classico. The difference will often not be in the quality of the grapes and winemaking but rather in the use of oak and aging with the Chianti bottling often being more fresh and fruit driven, meant to be consumed younger and usually with food. That’s not a bad thing if that is what you want.

What you should do instead: Ask about the producer. Again, good producers make good wine and they rest their reputation on every bottle that is labeled with their name–whether it be on a Chianti or a Chianti Classico. If you are just looking for a fresh and easy drinking Chianti to go with a dinner, you don’t necessarily need to spring a couple extra dollars more for the Classico if a good producer’s Chianti is available.

2.) ‘Riserva’ on Italian wines like Barolo or Chianti
The assumption: “This term indicates the winery has full confidence this wine has high potential and shows their best quality. Since the term is regulated in Italy, a riserva is always better than a non-riserva and is an important word to look for in Italian wines.”

Err….no: I’m going to do a shout out here for one of my favorite wine books, Peter Saunder’s Wine Label Language. Published in 2004, it does need to be updated in a few places but for the most part it does an awesome job of telling you exactly what the regulations are for different wines. In the picture below we see what distinguishes a Barolo Riserva from a regular Barolo.

The difference is age before release. Yes, you can follow the logic that a winery will save their best plots and best barrels for the wines that they proudly will label as a “Riserva”. But that certainly doesn’t mean that if you are standing in front of two bottles, say a 2011 Barolo and a 2010 Barolo Riserva, that the 2010 Riserva will be the better bottle, right now. In fact, often its not. Often the reason why Riservas get more age is because they need it and may need even more aging beyond the release.

What you should do instead: Ask which wine is drinking better now. When making a wine purchasing decision, your focus should never be on getting the categorically “best bottle” (by whatever vague or subjective standard) but rather on getting the best bottle for you at that moment. That 2011 Barolo which was from a very good year may be at a point in its life where it will give you more pleasure drinking it now than the 2010 Riserva even though 2010 was an outstanding year. And remember, producer matters too. A good producer’s non-Riserva can easily beat a sub-par producer’s Riserva even in classic vintages.

A gimmicky frosted bottle also isn’t a sign of quality either.


3.) ‘Gran Reserva’ on a Rioja
The assumption: “… you’re always looking for, without exception, the Gran Reserva,” says Kleinhans. “It means this wine has a strong oak flavour, the hallmark flavour of Rioja. It also guarantees this wine has been aged in oak for two years or more, and an additional three years in the bottle.”

Err….no: OMG NO! I’ll save for another blog post about the changing style of Rioja but most wine folks nowadays would say that the Reserva level (minimum 1 year in oak, 2 year in bottle before release) is more indicative of a winery’s “style” and consumers are flocking towards the fresher and more fruit forward styles of a lot of Crianzas (minimum 1 year in oak, 1 year in bottle) and Jovens (only a few months, if any, in oak).

What you should do instead: Pick the style that you enjoy. If you like oak, more dried fruit, spice and earthier flavors, then by all means, grab a Gran Reserva Rioja. There are definitely some great examples out there. But if that is not the style you like, then someone telling you that “without exception” you’re not getting the right bottle if it is not a Gran Reserva is dead wrong. The wines of Rioja are not monochromatic and I dearly pray that anyone who has so been lead astray with such horrible advice will give Rioja another chance and seek out some of the exceptionally well made Crianzas and Reservas out there.

4.) ‘Old Vine’ on a Spanish Grenache or California Zinfandel
The assumption: “The older a vine is, the smaller the grapes are and the more concentrated and jammy the flavour will be.”

Err….no: Well….kinda. Older vines have better means of naturally regulating the yield (smaller yield, not necessarily smaller grapes) and there is some relationship between yield and wine quality–though it isn’t so cut and dry.

The problem is that the term “Old Vine” isn’t regulated anywhere. It could be applied to a 20 year old vines just as easily as 100+ year old vines. It could also be used to refer to a wine that may have been 60% sourced from 40+ year old vines with the rest supplied by 10-20 year old vines. It’s truly up to the producer (or marketing department) to decide what the term means.

What you should do instead: Ask about the producer. Find out the story about the wine and look for a vineyard name. Truly “Old Vine” wines will have a story behind them and a vineyard whose name the producers are usually quite proud to put on the label. Plus, in the US, vineyard designated wines DO have regulations that they need to follow in order to use the vineyard’s name on the bottle which includes having 95% of the wine sourced from just that vineyard.

5.) ‘Cru Bourgeois’ on a Bordeaux

You may or may not see the word “Cru Bourgeois” appear on a label because, again, the system is a mess. Your best bet is to talk to a knowledgeable wine professional and ask for a recommendation.


The assumption: “Those are the chateaus not allowed into the Grand Cru classification 150 years ago. Several outstanding chateaus were left aside, and nowadays these wines not labeled Grand Cru, but Cru Bourgeois, you can get at a great value. It’s the level right under the Grand Cru level people are paying thousands for.”

Err….no: Simply put, the Cru Bourgeois system is a mess. This will certainly be a fodder for another blog post in the future but the key thing that you should know right now is that the term “Cru Bourgeois” has been so diluted and devalued that many of the best estates in Bordeaux that could use the term, such as Chateau Lanessan, Ch. Chasse-Spleen and Ch. Sociando-Mallet, etc. have declined to do so.

What you should do instead: Ask about the producer. Are you noticing a theme? While there are certainly lots of outstanding values in Bordeaux beyond the fabled 1855 Classification, there is no magic silver bullet term that is going to make those values jump out at you. You can either figure it out by trial and error (which following this Cru Bourgeois magic bean would lead to a lot of the latter) or you can ask people who have already done the trial and error themselves.

6.) ‘Meritage’ on a California Cabernet Sauvignon
The assumption:“Relatively simple, but Meritage is a marriage of words between “merit” and “heritage,” and you’ll only ever find it on Bordeaux-style wines from California.”

Err….no: So. Much. Wrong. First I would encourage you to check out the Meritage Alliance page where you’ll find out that, No, California is not the only place that you’ll find “Meritage” wines from. Oh yes, there are Meritages being produced across the United States in places like Washington State, Virginia, Missouri and even Rhode Island. Also, a Meritage doesn’t even need to have any Cabernet Sauvignon in it. You can make a “Right Bank Bordeaux-style” Meritage of Merlot and Cabernet Franc or you could make a Carménère-Malbec blend (which sounds really cool) and call it a Meritage.

However, the main reason why this magic bean is bad advice is that the term Meritage is appearing less and less often on wine labels. That’s not because wineries are not making Bordeaux-style wines anymore but rather because fewer wineries are seeing the need to pay a group like the Meritage Alliance membership dues and trademark fees to use the term ‘Meritage’ when they can just come up with a proprietary name and sell it as a red blend.

What you should do instead: Walk into the Red Blend aisle or flip to that page in the wine list and, you guessed it, ask about the producer.

7.) ‘Trocken’ on a Riesling
The assumption: “In the US we often enjoy drier wines, and the Germans have a word for it: trocken,” Kleinhans says.

Err….no: Actually, the common knowledge in the wine industry is that Americans “talk dry but drink sweet” (another future blog post topic). This is why wines like Apothic Red and Menage a Trois are so popular. Even with noticeable sweetness, they are marketed as just “red wines” which most people assume are always “dry”. It’s also how Meiomi Pinot noir, with Riesling and Gewurztraminer blended in, became a $315 million dollar success. It was a subtly “sweet-ish” Pinot noir that Americans could happily guzzle down without even knowing that there was any residual sugar in the wine.

What you should do instead: Enjoy what you like! (Another reoccurring theme here) If you like sweet wines, wonderful! If you like Apothic, Menage a Trois and Meiomi, that’s fantastic. If you don’t, that’s fine too. There’s plenty out there for everyone. You don’t have to seek out a dry, trocken Riesling just because someone is telling you that is the better wine. Besides, one of the reasons why Riesling is the darling of sommeliers is that the interplay of the wine’s natural sweetness with its lively acidity is magical with food pairing. So knock yourself out.

8.) ‘Premier Cru’ on Burgundy
The assumption: ““With some luck you will find one under $25 and know with confidence you have a single vineyard, highly classified Burgundy rather than a lesser level,” Kleinhans says.”

Err….no: This magic bean isn’t horrible advice. But, again, it’s incomplete. For one, you can have a blend of multiple Premier Cru (or 1er cru) vineyards and still have it labeled as Premier Cru. Second, it is actually getting harder and harder to find good Premier Cru Burgundies under $25.

What you should do instead: The better bet for value is to look more for “Village-level” bottles from areas like Mercurey or even regional Bourgogne levels from outstanding producers. As the mantra goes, good producers make good wine. This will always be your safest bet.

9.) ‘Cru’ on a Beaujolais
The assumption:“These other so-called Cru Beaujolais, you know under $25 that you found a Beaujolais that is as serious and as good as many of the great red Burgundies.”

Err….no: I love Cru Beaujolais but I would never compare these to the “great red Burgundies”. That’s not the point of them as they are made from two different grapes. The Gamay grape used in Beaujolais lends itself better to fresh, floral and slightly spicy wine styles that can pair with a variety of food dishes. The Pinot noir of the “great red Burgundies” tend to show its best with more spice and earthy complexity that pair with heartier dishes.

What you should do instead: So, yes, discover Cru Beaujolais. They are so much better than Beaujolais Nouveau which is, sadly, the extent of most people’s experience with Beaujolais. But don’t try to paint them as something that they’re are not. It’s like appreciating the skill and talents of George Clooney without trying to paint him as Laurence Olivier. They both have their charms but they’re different.

10.) ‘Grand Vin’ on a Bordeaux

Some estates, like the First Growth Chateau Margaux, even make a "Third Wine" which in exceptional vintages like 2010 can be outstanding values. I was very excited to see this wine on the list of Goodman's Steakhouse in London.

The assumption: “The best berries of every vintage are selected into this wine — it’s not one of the leftover sell-offs. This is important because in many years in France, the lesser berries are very disappointing. Sometimes the Grand Vin is very expensive, but you can get many under $25.”

Err….no: Why in the world would they use a bottle of Chateau Latour (average retail price $792 a bottle) to illustrate this point, I have no clue. This slide kind of seems like it wants to be a continuation of the Cru Bourgeois tidbit from #5 but is even less useful. Yes, the Grand Vin is a producer’s “top wine” but that tells you nothing about the quality of the producer themselves.

What you should do instead: Ironically, the “leftover sell offs” that Kleinhans poo poos is often a great value. Rather than “sell off” the grapes, many high quality producers will make a Second Wine from lots that have been declassified. Different producers have different guidelines but the basic idea behind a producer doing this is that they only want to make a limited quantity of the Grand Vin, of which they want to be extremely selective in making sure that only the cream of the crop is used. This doesn’t meant that the declassified lots are “very disappointing”, they’re just not the very best. These second wines are still being sourced from many of the same vineyards and terroir of the Grand Vin and handled with the same amount of exceptional care and skill.

It’s like the difference between getting a ‘A+’ on the report card in school versus a ‘B+’. They’re both very good grades, just one’s better. While mom and dad may have given out $5 for each “A” on the report card and $3 for each “B” so too do we see a difference in the pricing between the top tier Grand Vin and the top value Second Wine. For example, the 2010 Chateau Margaux (incredible wine, incredible vintage) earned numerous 100 point accolades and averages for over a $1000 a bottle. The second wine, the 2010 Pavillon Rouge, also earned lovely accolades such as 96 points from James Suckling and a pair of 94 points from Wine Enthusiast and Wine Spectator. That wine retails for an average around $195 a bottle. But, again, this is where knowing the producer is key if you want to get the best value. In many cases the second wine of an outstanding producer, for less price, is better than the Grand Vin of a sub-par one.

Moral of the Story (Part II)
There are no “silver bullets” or “magical words” that will pick out for you the best bottle for the money each and every time, only magic beans that give you part of the story. If you really want to increase your odds of getting the right bottle for you, the best thing you can do is simply ask about the wine–get more of the story. Whether it is a restaurant sommelier or a store retail clerk, ask them what they think about the wine and how it matches up with the kind of wines that you personally enjoy.

This is Napa

Forbes contributor Cathy Huyghe recently did a lovely write up on Cain Vineyard & Winery and described why she feels that the Spring Mountain estate is the “ultimate movie location in the Napa Valley”. While I’ve not had the privilege of visiting Cain, I was recently at Spring Mountain in August and got to experience the majesty of the fog from nearby Barnett Vineyards on Spring Mountain. I took a video as I was walking through the vineyard and about 15 seconds in you can see my “WOW” moment with the fog.

Seeing the fog and watching it slowly burn off over the course of an hour as it crept back towards San Pablo Bay had me feeling like Neo from The Matrix the first time he had programs, like martial arts, uploaded directly into his brain. It really clicked what made Napa so unique. I’ve read about it. I’ve tasted a lot. I’ve visited the area before (just not this early in the day) but all that stuff I thought I knew became more vivid and real at that moment.

This is how such a warm, beautiful Mediterranean climate can still produce wines with such lively acidity that allows them to still taste fresh and then age for decades. This is why, contrary to what is the norm in the Northern Hemisphere, AVAs to the north like Calistoga and St. Helena are so much warmer and can grow Zinfandel while AVAs to the south like Carneros and Oak Knoll District are more Pinot and Chardonnay country. This is why with the vineyards planted in the Mountain AVAs that your elevation and placement above or below the fogline can be the difference between wines with chewy but ripe tannins or wines with more intense and firmer tannins.

It truly is an incredible sight and experience that no amount of pictures, videos or descriptions would ever do justice. I would encourage any Napa Valley wine lover to make it a point, at least once in their life, to book an early morning appointment with a producer on one of the mountain AVAs. Not only are there several terrific ones on Spring Mountain like Barnett, Cain, Philip Togni, Newton, Pride, etc but there are usually tourist options on Howell Mountain and Mount Veeder as well. It might take a bit of cajoling to convince them to open the gates that early for an appointment but it’s worth the effort.

But be forewarn, if the wine is even half as awesome as Barnett’s was, it will be incredibly difficult to want to spit. So just enjoy your early morning boozing with a view. We won’t tell anyone.

Practice makes Super Human

The CBS station in Las Vegas posted a report about scientists studying Vegas somms as part of Alzheimer’s research. They interviewed the wine director of Mandalay Bay, Harley Carbery, and threw this effusive praise his way:

Now I have no doubt that Carbery is a sommelier with an excellent palate and sense of smell. My wife and I have stayed at Mandalay Bay a couple times and we’ve loved the wine and spirits selections at their casino bars and restaurants. Aureole, in particular, is a must visit for any food and wine lover. But Carbery is not “almost super human”. He’s a professional who has put in the time and effort to be very good at his job.

He’s like the nurse who has spent hours practicing on dummies (and willing friends & family members–sometimes one and the same) at finding the vein to draw blood or set up an IV painlessly. The chef who has cracked many, many eggs in their career and can flip an omelet with pitch perfect perfection every time. The software engineer who can look at lines and lines of code and spot almost in an instance where the bug is. The concert pianist who has devoted thousands of hours of practice time towards letting the beauty of Chopin glide seemingly effortlessly from their fingers. Harley Carbery is like Yadier Molina, who has practically perfected the art of managing pitchers and catching by never settling and always striving to get better.

Yes, there is certainly an element of natural-born talent but even the greatest athletes and musicians in the world will tell you that is only a small fraction of what made them great. But let’s also be frank here, smelling and analyzing wine is not playing Chopin nor is it trying to do a full back twisting salto on the balance beam. (You go Simone!) It’s a skill, yes, but it’s a skill that is built up more through practice than through the fortunate blessings of innate talent. Also, if we want to get into the nitty gritty, most women have a leg up on some one like Harley Carbery through genetics that tend to favor women’s sense of smell over men.

The point of this is not to bring some one like Harley Carbery down to human level, but rather to point you towards the path that you could take to be “almost super human” yourself. The quote near the bottom of the article from Dr. Sarah Banks of Cleveland Clinic Center for Brain Health, sums up this path really well.

Don’t just smell the roses. Smell everything. Smell the spices in your spice cabinet. Smell the different plants in your neighborhood as you take a walk. Smell the linens at Bed, Bath & Beyond–ideally when the employees aren’t looking. Don’t make it weird. Smell the room when you first walk in. Even the bathroom. (Hola Brett!) Just smell and spend a few brief seconds thinking about what you are smelling. (Emphasis on brief sometimes more than others)

But don’t over think it. Trying to “correctly” identify what you’re smelling is not necessarily the point and when we take this exercise over to the world of wine, this becomes the biggest pratfall for a lot of people. Yes, there may be a tasting note or other people around you waxing poetically about anise, nutmeg, cassis, thyme and Nicaragua Maduro wrapped tobacco and you’re not getting any of that. That’s FINE! Just focus on you and what you are getting. If all you’re getting in the wine is Red Vines black licorice, blackberries and Swisher Sweets, then your redneck description of 2005 Lynch Bages is just as on target as the wino next to you.

One of the best exercises that I ever did in my wine training was during a Sensory Evaluation class at the Northwest Wine Academy taught by the simply fabulous Regina Daigneault. Using an aroma infusion method that she learned from the equally fabulous Dr. Ann Noble of UC-Davis, inventor of the Wine Aroma Wheel–which is 7 shades of awesome BTW, Reg put in front of us several glasses of a neutral white wine that had one dominant aroma infused in it. She told the class, right off the bat, don’t try to immediately identify it. Just think about it because our entire perception of aromas are tied to particular memories of when we encountered that smell. If you can tap into that memory, you’ll be able to more easily recognize that smell.

However, sometimes our memories are like witnesses on Law & Order–we often add our unique spin to them. But since we are just drinking wine and not trying to solve a murder with Fred Thompson breathing down our backs, that’s perfectly fine. For instance, during that exercise one of the glasses of wine made me think of pot and hippies. It had this mix of herbal, medicinal and floral notes that made me think of incense and hemp products. Turns out that the aroma in that particular glass was cardamon. For whatever reason, that connection in my brain interprets the aroma of cardamon in wine with my memories of “pot and hippies” (Hey, I live in Seattle!). Now, I’ve got that aroma note down solid and can easily pick it out of wine. If I’m swirling a glass and it makes me think I’m in Eugene, Oregon or at a Rasta shop then boom I know I’ve got cardamon.

Truly the more off the wall the memory and connection you make, the better it is for you to retain it. So spaz out and smell the world. You don’t have to aspire to reach the level of someone like Harley Carbery who is at one of the pinnacles of his profession. But there is still benefit for all of us in practicing towards becoming an “almost Super Human” smeller. Not only will you get a lot more out of your wine drinking, as recent studies have shown your vino homework may also help ward off diseases like Alzheimer’s.
